Preheat oven to 400 degrees. Grease an 11-inch pie plate with cooking spray. Chop onion, jalapeno and red bell pepper. Sometimes I do this prep the night before so all I need to do is assemble it and put it in the oven.
Cook chorizo, drain off any excess fat. Sprinkle chorizo in the bottom of the prepared pie plate. Sprinkle grated cheese on top of chorizo.
Then sprinkle the onions, jalapenos and bell peppers on top of the cheese.
In a large bowl combine, eggs, milk, salt and pepper. Mix with an electric hand mixer if possible. Then add in 1 cup of Bisquick baking mix. Mix until smooth.
Pour wet mixture into the pie plate over the other ingredients. Place in the oven for 35-45 minutes, rotating during the baking process so that everything cooks evenly. Bake until golden and toothpick inserted comes out clean.
Allow to cool for 15 minutes before serving.
Slice and serve with avocado slices, salsa and sour cream. Enjoy!
